The Italians are very good at creating substantial snacks. Bruschetta is wonderful because it uses very simple ingredients yet yields something that looks good and is easy to eat. For a simple one-pot meal, lemon and chicken are a delicious combination that can be quickly put together. Add some bread and salad and your guests will sing your praises for a long time.
Scrumptious Bruschetta
Total time: 15 minutes
Serves 4
Bruschetta is one of the quickest and easiest snacks to make in the world, it is also very satisfying.
- 1 loaf Ciabatta bread sliced in half bagel style and cut into 4 inch (10cm) slices
- 2 or 3 (medium size) ripe tomatoes, chopped
- 1 clove garlic
- 1 small tin anchovy fillets (optional - You can use mozarella as an alternative)
- Salt & freshly ground black pepper to taste
- Extra virgin olive oil
- Garnish with basil or chopped parsley
Preparation
- Toast the Ciabatta bread (both sides).
- Gently rub the cut side with a cut clove of garlic (be careful not to over do it).
- Spread a thin layer of chopped tomatoes over each slice.
- Place 1 anchovy fillet strip on each slice (optional).
- Sprinkle with olive oil and season with salt and pepper.
- Add garnish.
Heavenly Lemon Chicken
Total time: 15 minutes
Per person
- 1 chicken breast fillet skinned
- 2 teaspoons butter
- Juice from 1/2 lemon
- Salt & freshly ground black pepper to taste
- 1 teaspoon parsley, chopped
Preparation
- Place each fillet between two sheets of wax paper & pound to an even thickness (approx 1/4").
- Melt butter in a pan over medium heat until bubbly.
- Add the chicken and sauté until golden (3 minutes per side).
- Remove the cooked chicken to a warm plate, and "de-glaze" pan with lemon juice.
- Add parsley, stir quickly and pour over chicken as sauce.
Serve with salad and or quick cook noodles.
