With National BBQ week on its way, why not try this perfect summer recipe for
lamb koftas with tzatziki and spinach? - It'll make a wonderful treat for the whole family.

lamb koftas with tzatziki and spinach
Preparation time - 25 minutes
Cooking time - 100 minutes
Serves 4
lamb koftas: ingredients
250g/10½oz minced lean lamb
2 shallots, finely copped
juice of half a lime
1 clove of garlic, crushed
1 tbsp chopped fresh mint
1 tbsp chopped fresh coriander
1 tsp cumin seeds, crushed
1 tbsp pine nuts
pinch dried cinnamon
dash of worcester sauce
pinch of chili flakes (optional)
salt and pepper to taste
wooden skewers (pre-soak for 30 mins to stop drying out when cooking)
method
- Toast the cumin seeds and pine nuts over a high heat. Remove and place in a mortar and pestle
or food processor and crush. Add to the mince.
- Combine the lamb mince with the shallots, lime juice, garlic, mint, coriander, cinnamon, worcester
sauce and chili flakes.
- Form the mince mixture around the skewers. If you don't have any skewers, just roll into
small sausage shapes.
- Place the skewers on a griddle, turning until nicely browned.
Please remember, if you think this recipe is too spicy for your child, the chili flakes
and worcester sauce are optional.
tzatziki: ingredients
110g/4oz of yoghurt
half a cucumber, sliced and chopped
juice and zest of 1/2 lemon
1 clove of garlic, crushed
method
Combine all ingredients and set aside.
spinach: ingredients
500g fresh spinach
knob of butter
freshly milled black pepper
method
- Place the spinach in a steamer and cook for 8 minutes.
- Move the spinach to a pan, add a knob of butter and some black pepper and heat through
for 2 minutes.
