With National BBQ week on its way, why not try this perfect summer recipe for lamb koftas with tzatziki and spinach? - It'll make a wonderful treat for the whole family. If you've got a favourite recipe, please let us know, and we'll share your suggestions with other Blooming Marvellous readers.

lamb koftas with tzatziki and spinach

Preparation time - 25 minutes
Cooking time - 100 minutes
Serves 4

lamb koftas: ingredients

250g/10½oz minced lean lamb
2 shallots, finely copped
juice of half a lime
1 clove of garlic, crushed
1 tbsp chopped fresh mint
1 tbsp chopped fresh coriander
1 tsp cumin seeds, crushed
1 tbsp pine nuts
pinch dried cinnamon
dash of worcester sauce
pinch of chili flakes (optional)
salt and pepper to taste
wooden skewers (pre-soak for 30 mins to stop drying out when cooking)

method
  1. Toast the cumin seeds and pine nuts over a high heat. Remove and place in a mortar and pestle or food processor and crush. Add to the mince.
  2. Combine the lamb mince with the shallots, lime juice, garlic, mint, coriander, cinnamon, worcester sauce and chili flakes.
  3. Form the mince mixture around the skewers. If you don't have any skewers, just roll into small sausage shapes.
  4. Place the skewers on a griddle, turning until nicely browned.
Please remember, if you think this recipe is too spicy for your child, the chili flakes and worcester sauce are optional.

tzatziki: ingredients

110g/4oz of yoghurt
half a cucumber, sliced and chopped
juice and zest of 1/2 lemon
1 clove of garlic, crushed

method

Combine all ingredients and set aside.

spinach: ingredients

500g fresh spinach
knob of butter
freshly milled black pepper

method
  1. Place the spinach in a steamer and cook for 8 minutes.
  2. Move the spinach to a pan, add a knob of butter and some black pepper and heat through for 2 minutes.
