Prawn and Beef Kebabs

Prawn kebab: ingredients

1-3 – depending on size uncooked tiger prawns (shells on) per Skewer
Wooden kebab skewers soaked for at least one hour in warm water
2 tbsp olive oil
Salt and freshly ground black pepper
1 lime, cut into wedges to garnish
1 lime – zest and Juice
1 Tablespoon chopped parsley


method
  1. Make a marinade by combining the lime juice, zest, parsley, salt and freshly ground black pepper.
  2. Skewer the tiger prawns onto the skewers, and place in marinade. Leave for 1-2 hours turning them over at least once.
  3. Prepare barbecue or heat a griddle pan until smoking.
  4. Place the kebabs onto the griddle pan or barbecue and char grill for three minutes on each side, or until completely cooked through.


Beef kebab: ingredients

For the kebab
500g beef steak, trimmed and diced
1 Onion cut into largish chunks
1 Sweet pepper any colour cut into largish chunks
Wooden kebab skewers soaked for at least one hour in warm water

For the marinade
2 tbsp olive oil
Salt and freshly ground black pepper
1 lime, cut into wedges to garnish
1 Orange – zest and Juice
1/2 teaspoon grated nutmeg
Small piece of ginger finely chopped
splash of red wine
½ beef stock cube


method
  1. Combine all the ingredients for the marinade add the beef cubes and leave to marinade for at least 2 hours at room temperature or overnight in the fridge.
  2. To make the kebabs, thread the beef cubes onto the wooden skewers with a piece of onion or pepper garnish between each cube.
  3. Prepare barbecue or heat a griddle pan.
  4. Place the kebabs onto the griddle pan or barbecue and char grill for eight to 10 minutes or until cooked – turning them regularly.
  5. Serve either or both with green salad garlic bread and a drop of the Amber Nectar.
