Oven Baked Cod with Roasted Vegetables
(When choosing vegetables for roasting, go for those with the darkest colours of red, orange and green; they are richest in nutrients!)

Ingredients:

  • 4-6 cloves garlic, leave on skins
  • 300g carrots, peeled and sliced
  • 300g courgettes, sliced
  • 3-4 sweet peppers (any colour) cut into strips
  • 4 small red (or white) onions, peeled and quartered
  • 4 medium potatoes - quartered and blanched (place in boiling water for 2-3 minutes, drain and set aside)
  • 6-8 tablespoons olive oil
  • 4 cod fillets (make sure to remove all bones)
  • 1 lemon
  • salt* & freshly ground black pepper to taste
  • parsley (for garnish)

Method:

  1. Preheat the oven to 200°C.
  2. Mix the garlic and vegetables in a large shallow roasting pan, drizzle with the olive oil and season with salt and pepper. Place in oven and bake for 10 minutes.
  3. Season the cod fillets with salt and pepper to taste.
  4. Remove the vegetables from oven, place the seasoned cod fillets on top of the vegetables, squeeze juice of lemon over the dish, and place back in the oven. Bake for a further 20-25 minutes, or until the cod is golden and the vegetables are crisp.
  5. Remove from oven and serve. Enjoy!
