Easy-Peasy Fish Pie
Preparation Time: 10-15 minutes
Cooking Time: 40 minutes
(Serves 4)
Ingredients:
4 individual portions of frozen cod (you can also use other white fish)
4 or 5 potatoes, mashed
Grated cheese – gruyere or cheddar
Cheese sauce – you can easily make it yourself or use a store-bought one if you're in a hurry
Chopped parsley, salt and freshly ground black pepper
Your choice of steamed green vegetables – we recommend broccoli or peas
Mashed Potatoes:
4 or 5 large potatoes, peeled and quartered
75ml milk
30g Butter or Margarine
- Cook the potatoes until soft (add salt to taste)
- Drain and mash
- Stir in the milk and butter
- Set aside in a warm place
Cheese Sauce:
30g butter
2 tablespoons of plain flour
150ml milk
100 grams of grated cheese
1 tablespoon chopped parsley
Salt and freshly ground black pepper
- Heat the butter in a heavy saucepan over a moderate heat and add the flour
- Cook for 1 minute, stirring continuously
- Add the milk and stir until smooth
- Add grated cheese and chopped parsley (save some to garnish the pie)
- Season to taste with salt and freshly ground black pepper
Method:
- Pre-heat oven to 190°C
- Arrange frozen fish at the bottom of an oven-proof dish
- Pour over cheese sauce, ensuring all fish pieces are well-covered
- Top with an even layer of mashed potatoes
- Sprinkle with grated cheese
- Bake for 40 minutes or until golden
- Garnish with remaining parsley and serve with steamed vegetables
