Easy-Peasy Fish Pie
Preparation Time: 10-15 minutes
Cooking Time: 40 minutes
(Serves 4)

Ingredients:
4 individual portions of frozen cod (you can also use other white fish)
4 or 5 potatoes, mashed
Grated cheese – gruyere or cheddar
Cheese sauce – you can easily make it yourself or use a store-bought one if you're in a hurry
Chopped parsley, salt and freshly ground black pepper
Your choice of steamed green vegetables – we recommend broccoli or peas

Mashed Potatoes:
4 or 5 large potatoes, peeled and quartered
75ml milk
30g Butter or Margarine
  1. Cook the potatoes until soft (add salt to taste)
  2. Drain and mash
  3. Stir in the milk and butter
  4. Set aside in a warm place
Cheese Sauce:
30g butter
2 tablespoons of plain flour
150ml milk
100 grams of grated cheese
1 tablespoon chopped parsley
Salt and freshly ground black pepper
  1. Heat the butter in a heavy saucepan over a moderate heat and add the flour
  2. Cook for 1 minute, stirring continuously
  3. Add the milk and stir until smooth
  4. Add grated cheese and chopped parsley (save some to garnish the pie)
  5. Season to taste with salt and freshly ground black pepper
Method:
  1. Pre-heat oven to 190°C
  2. Arrange frozen fish at the bottom of an oven-proof dish
  3. Pour over cheese sauce, ensuring all fish pieces are well-covered
  4. Top with an even layer of mashed potatoes
  5. Sprinkle with grated cheese
  6. Bake for 40 minutes or until golden
  7. Garnish with remaining parsley and serve with steamed vegetables
