Smoked Salmon Tortilla
Preparation time 15 mins
Cooking time 20 mins
- 3 eggs whisked
- 3 medium-sized potatoes peeled and sliced
- 2-3 tbsp. (tablespoons) of olive oil
- 1 onion, chopped or sliced
- 100g smoked salmon pieces
- Salt and black pepper to taste
Preparation
- Parboil the potatoes by placing in boiling water for up to 5 mins depending on thickness and drain
- Heat the olive oil in a heavy frying pan
- Add onions and potatoes to the oil and fry until golden. Stir gently to ensure they don't stick
- Add the smoked salmon and stir
- Season the whisked eggs and pour evenly over the contents of the frying pan
- Cook over a low to medium heat: it may take up to 10 minutes until the egg is set enough to
turn the tortilla over. Be careful not to burn the bottom
- When firm enough, flip the tortilla by turning it out onto a plate the gently sliding it back
into the frying pan
- Then place the pan onto a low heat until it is cooked through
Delicious hot or cold and served with salad.
