Oat, raisin and sunflower seed cookies
How nice to be able to enjoy eating a cookie and know that it's good for you too!
If you suffer from nausea and sickness, try eating small meals every two hours
or so based on starchy carbohydrates which are slow burning foods that prevent
your blood sugar dipping and help ease nausea. Oats help to stabilise blood sugar
levels and give long lasting energy.
85g butter
85g golden caster sugar or soft brown sugar
1 ½ tsp vanilla essence
75g raisins
40g sunflower seeds
50g plain flour
75g porridge oats
¼(quarter) tsp bicarbonate of soda
½ (half) tsp salt
Makes 12 to 15 biscuits
Suitable for freezing
Cream together the butter and sugar until light and fluffy. Stir in all of the
remaining ingredients until completely combined. Shape into walnut-sized balls
and flatten slightly by pressing in the centre with your fingers.
Place in an oven pre-heated to 180°C for 12 to 14 minutes until golden. Cool on
a wire rack. Don't worry if they are quite soft when you take them out the oven
- they will firm up a little when cool and are supposed to be quite chewy. Don't
cook for longer than 14 minutes.
TIP: For a tasty snack sauté 75g/3 oz each sunflower and pumpkin seeds in a
tablespoon of vegetable oil stirring for 2 minutes until golden. Remove from the
heat, add 1 tbsp of honey and soy sauce and return to the heat for one minute.
Spread out onto a baking sheet in a thin layer and leave to cool. Pumpkin seeds
are rich in essential fatty acids and this is the most delicious way to enjoy
eating them.
