sesame beef stir fry
Your unborn baby places huge demands on your iron reserves. Large amounts of iron are
essential for the developing blood supply of the foetus and for the extra blood that
you need at this time. Iron is also important for placenta development and growth of
the baby. Also you need to build up your baby's own store of iron for him to draw on
in the first few months of life. Red meat provides the best and most easily absorbed
source of iron.
Its also a good idea to prepare some meals ahead and store them in the freezer ready for
when you come home from hospital with your new baby. Again iron is very important after
the birth of your baby as generally your iron reserves are low so this would be a good
recipe to have ready for your return.
Suitable for freezing
ingredients
1 tbsp sesame oil
1 clove garlic, crushed
1 medium carrot cut into matchsticks
100g (4 oz) baby sweetcorn cut into quarters
1 courgette (approx 100g/4 oz) cut into matchsticks
300g (10 oz) beef fillet, cut into very fine strips
1 tbsp cornflour
150ml (5 fl oz) beef stock
2 tbsp dark brown sugar
2 tbsp soy sauce
a few drops Tabasco sauce
1 tbsp sesame seeds
method
- Heat the sesame oil in a wok and stir fry the garlic, carrots,
sweetcorn and courgette for 3 to 4 minutes.
- Add the beef and continue to stir fry for 4 to 5 minutes.
- Mix the cornflour together with a tablespoon of water and stir into the beef stock.
- Stir this into the pan together with the sugar, soy sauce, Tabasco and
sesame seeds.
- Bring to the simmer, cook until slightly thickened and serve with rice.
